摩卡戚風蛋糕(6寸中空模)
麵糊材料:
蛋黃3顆
砂糖15g
米糠油15g(或其他淡味液體油)
低筋粉45g
無糖可可粉10g
特濃即溶咖啡粉5g
熱鮮奶40g
蛋白霜:
蛋白3顆
檸檬汁/白醋數滴
砂糖20g
*雞蛋是使用中型雞蛋,蛋黃加蛋白約55g
*低粉過篩2次
淋面鮮奶油:
動物性鮮奶油80g
鍊奶15g(糖量隨個人喜好)
用打蛋器攪打至稍微有紋路,有少許流動的狀態。
*動鮮不要打太過濃稠喔。
做法:
1) 熱鮮奶加可可粉及咖啡粉拌勻備用。
2) 蛋黃加砂糖攪拌至糖溶化。
3) 將米糠油加入(2)拌勻,接著加入(1)拌勻。
4) 加入已過篩的粉類拌勻至沒有粒狀為止。
5) 蛋白先攪打至起泡泡,加入砂糖與檸檬汁 ( 糖分2次加入 )打至8分發。
6) 將1/3蛋白霜加入步驟 (4)拌勻,再倒回剩餘的蛋白霜中拌勻。
7) 麵糊倒入模內,在桌上輕輕敲兩下,放進已預熱焗爐170度焗約20-25分鐘,
出爐後立即倒扣放涼,至模具涼透才可脫模。
8) 淋上鮮奶油,隨喜裝飾即成。
